Wait, what?

I am the worst blogger EVER!!  I had planned on taking lots of pics and making lots of posts during the holiday, but that obviously did  not happen.  I got busy baking, cooking, cleaning, being a mom, working, gifting, giving, getting...then we all got sick!  Don't do that, I do not recommend it. We are all on the mend, the house has been De-Christmases and the New Year has begun.  Which for me means I go into the declutter, clean house, everyone has to mode.  Every year, without fail, I get in a winter cleaning mode. I tend to spring clean a little early.  Not sure why, just do!  I have already cleared the clutter in 2 1/2 closets, one of my son's room, a lot in the hoard (our storage pantry) and various things through out the house.  I also have gone through ALL of my clothes in the closet and in my dresser and have donated about 3 large boxes of clothes that are all now TOO BIG!!  I have lost about 50 pounds.  F-I-F-T-Y.  5-0.  Five zero.  Wait, what?  I am still in a little shock, okay a lot of shock.  I was still seeing the fat girl in the mirror, the bumpy, lumpy girl...until I took some photos of myself last night in my smallest jeans.  Seriously, I cried, it was a great wait, what moment.  Here is the proof!

I am planning a post soon on how I lost weight, what has happened to make it happen and my daily routine and meals.  Planning...ummm...yeah, we know how that has been working for me.  One day at a time, I will get into this blogging thing.  I have so much to say and talk a lot, you would think I could blog every dang hour.  But alas, I must go and do things like work, clean, organize, cook, take care of kids, take care of animals...dang, I am busy, I better go!

Let the sugar coma commence!!!

The Christmas baking has begun!  Ring the bell, alert the masses, the sugar has started to flow!  I have the baking planned and began this weekend.  I LOVE cooking and baking...most of the time.  Hee hee!  I started with something I really have been craving wanting to make lately, Chex Mix Muddy Buddies.  I also decided to do a trial run at my Meemaw's Chocolate Cream Pie.  Ummm, well, the pie was tasty, the crust was golden and flaky, but it did not set up as firm as it should so the pie was more of a pudding consistency and not how I remembered.  That is why I decided to make one this weekend, to check and see how it came out.  Yep, it had NOTHING to do with the fact that Mr. C wanted pie or that I wanted chocolate cream pie...NOTHING, it was all for test purposes!  Sure!

Now on to the Muddy Buddies.  Some people call these Puppy Chow because it looks a bit like kibble and that is what we grew up calling it, but the box says Muddy Buddies and that is what we shall call them now.  I know, I know there are all kinds of different ones now you can make with all kinds of ingredients, spices, candies and what have you, but for us, I wanted the traditional version.  This one:

It is not hard to make, does not take much in the way of fancy ingredients, but they are so tasty and remind me of my family and Christmas time so much!  Again with the nostalgia, I blame the holidays.  Below is the finished product.  So dang good!  The recipe calls for putting the cereal after coating in a plastic bag to shake in the sugar and others I have seen call for a paper bag....I just put mine in my BIG BERTHA of a stainless bowl, stir it and then toss it around in the bowl until it is coated.  You may have a little powdered sugar dust and don't breath too close, but this method works great for us.  :)

I will have to try another recipe for chocolate cream pie, I have one in mind, but we shall see.  Do you have one you rely on or share?  I do NOT like meringue, so I need one that does not require it.  Not sure why, just have never liked the flavor or texture of meringue.  I prefer whipped cream and lots of it!

The most wonderful time of the year!!

I LOVE Christmas!  LOVE IT!!  Everyone knows the reason for the season and that is very important to many of us.  This is not a blog about religion, so we will leave it at that.  Not all readers are of the same faith and beliefs, sooooo, yeah.

Christmas has always been a magical, wonderful, fun filled, joyous occasion for my family.  I can remember my grandmother's baking, the great foods, the decorations, the traditions and the laughter and love that always surrounded us.  I am a product of divorce, so I had at least 3 Christmases most years between parents, step parents, grandparents, etc.  My Meemaw made amazing treats that seemed to never run out and she always made special trays and cookie tins for friends and family. I think between her and my Mummsy, the baking and cooking I love to do at holidays must be genetic.  I love shopping for the ingredients on sale and what I have coupons for, planning on what to make with what we have, what I love and some of the traditional things I have grown up with.  Christmas is just so wonderful for so many reasons.

Over the next couple of weeks, I am going to do a post a day on Christmas in our house!  I will share my recipes, my decorations and what our family is up to.  I hope you enjoy the posts as much as I will enjoy baking for them!

Our Son is Army Strong

I guess, first I should tell you a little more about our family.  Mr. C and I have been together going on 4 years and together we have 6 boys between ages 13-20.  In this blog, I will lovingly refer to them as thing #1-thing #6!  Lol!  I LOVE my sons and love being a mom to them.  They are loving, caring, good people and I am proud of the men they are becoming.  That being said, they are boys and well, boys will be boys at times.  We have our struggles with a couple of them that like to push boundaries and we are pretty strict and old school when it comes to A LOT of things.  But again, they are good guys and I am proud of my sons.

Yesterday, Mr. C and thing #3 went to talk to the Air Force recruiter and unfortunately even though we had an appointment, when they arrived the door was locked and they were closed.  I thought that was pretty crappy!  However, it worked out for the best...God always has a reason!  #3 really has been leaning toward the Army so it was all good.  They have a position opening up that is just what he wanted to go into and he (and we) are extremely excited!  He is going to do amazing things and get to travel the world.  I am so proud of him I could just burst!!  Next Friday we get to attend his swearing in ceremony.  I am going to cry, I know it, but that is okay!  I will take lots of pics and share them with you.

*sigh...where does the time go?  I am really feeling nostalgic lately...not sure if it is the holidays, pulling out all of the Christmas stuff I have had since the boys were little, spending time with family, or all of the above.   I do love this time of year, it is my favorite time of the year!  The lights, colors, songs, love, generosity of the season and spending time with family...what's not to love?  This weekend will be filled with Christmas decorating and some baking so get ready for some recipes and pics!

Starting at the beginning!

Welcome, welcome!!  You have landed on our little corner of the web and we are pleased as pie to have you!

This blog will hopefully be the start to a wonderful relationship with the interwebs and those that might actually read about our crazy little lucky cluck farm life.  I have a lot to say and figure that typing it out is a GREAT idea and getting to share ideas, thoughts, recipes, tips, tricks and my general craziness is the BEST idea.  I am a 40ish mom of 6 boys...YES 6 of them.  They are aged 13-20 and let me tell you, I never ever knew that boys could eat so dang much.  See, teenage girls don't eat like teenage boys, at least I know I did not.  I am married to Mr. C, my partner in crime, my Mister Fixer, my builder and tinkerer, my best friend.  I work full time for a University in Texas and then go home and work full time as a wife, mom and creative soul.  I just opened an Etsy shop and I am so excited about selling the things I have collected and create.  SO stinking excited!!  :)

I think I will start this blog with a recipe I made this weekend!  It was my Dad's birthday the day after Thanksgiving and he loves coconut cream pie, therefore, after 2 days of cooking Thanksgiving dinner, pies and treat, I decided to make another pie.  There was a lot of pie last week.  I found this on Pinterest (I am addicted to Pinterest) and it turned out amazeballs!  It was the best coconut cream pie I remember ever having.  You should make one..seriously...you should!!

Coconut Cream Pie

Old Fashioned Coconut Cream Pie ~ This is a tried-and-true, old-fashioned coconut cream pie. Took many years of searching and baking to find the right one and this is it!

I found the recipe on QVC.com of all place, but hey, it is so good I am not going to knock where it came from!  One little change I made the recipe was to add about 1/4 tsp of coconut flavor.  It does not call for it, but it added just a little more coconutty flavor than just putting in the toasted coconut.  Coconutty.  Yes, that is a word.  I think.
